Rocko’s was founded in 2013 to serve carefully crafted and custom-made ice cream tacos using high quality, locally sourced, and organic ingredients; all wrapped up in one cute, little package! (RIP Chocotaco.) What started with just a small cart at the farmer’s market eventually expanded and in Spring 2018, we opened our first brick-and-mortar store in Santa Clara, CA.
We hand make our waffle taco cones, fill them with one (or two!) house-made ice creams, then dip them into a variety of high quality organic and fair trade chocolates and toppings. And while we believe in transparency in our food system, a little bit of smoke and mirrors seems fitting for this product–the (not so) secret final “ingredient” is a dip into liquid nitrogen to bind all of the goodness (without any of the mess). And that first bite is… MAGIC!
